    nice pictures, but you do realise this is principally a UK forum and these animals don't exist in our country?

    yes, keep the photos coming, its nice to see them even if we never get the chance to see them up close and personal ourselves.

    I like to hang the meat for 10 days, then it will take me about 3 days to soak in water with a little salt to lift any hair that is on the meat. Then it takes me about 2 days to cut and wrap .
